





The New Lunar Year has kicked off, and it’s time to unleash your “big tiger energy.” The Year of the Tiger is said to bring fierceness, adventure and a whole new season of Bling Empire. As we await the drop of Season 2, there is no better time to get caught up on all the drama (remember that, ahem, big discovery at Anna Shay’s spa day party?). So, we’re rewatching the season that hooked us in the first place and making it a party with crispy, savory veggie spring rolls.
Spring rolls, or chun uan in Mandarin, symbolize wealth and prosperity, so bring it on! This festive dish is simple enough to assemble on your own, but it's definitely more fun when you can roll with your crew. A plate of steaming spring rolls is sure to elevate the party — so much so that your frenemies might actually thank you for the invite.

Veggie Spring Rolls
2 tbsp canola oil 8 oz shiitake mushrooms, sliced 1 cup shredded carrots 2 cups napa cabbage, thinly sliced (substitute with kale or spinach) 1 bunch scallions, thinly sliced, reserve a tbsp for garnish 2 cloves garlic, grated 1 tbsp ginger, grated 2 tbsp soy sauce 1 tbsp rice vinegar 1 tsp sesame oil 12 spring roll wrappers
In a large skillet, heat one tablespoon of oil over medium-high heat. Add the mushrooms and sauté them until they start to brown. This should take about 5 minutes. Add the scallions, carrots, napa cabbage, garlic and ginger. Season with salt, and saute the veggies until the cabbage wilts (about 4 minutes). Add the soy sauce, vinegar and sesame oil. Sauté the filling for one more minute and then remove from heat.
On a clean work surface, place a spring roll wrapper with a corner facing you so it makes a diamond shape. Place a couple of tablespoons of filling in a line across the middle of the wrapper. Lightly dampen the top and bottom corners with water and fold it up like a burrito.
Now, it’s time to pan fry the spring rolls. Heat three tablespoons of canola oil in a clean skillet over medium heat. Place a few spring rolls in the pan, seam side down. Cook on both sides until golden brown, approximately 3-4 minutes per side. Serve these hot, crispy rolls with your favorite store-bought dipping sauce — and don’t be afraid to splurge. With all the prosperity that's coming your way this year, you can afford the good stuff.
